Keto Chicken Broccoli Casserole Recipe

Casseroles are a comfort food. However, many of them are made with high carbohydrate ingredients and can spike your insulin and increase inflammation. It is always nice to find a recipe or dish that you can modify to taste fantastic. Chicken broccoli casserole was one of my favorites growing up. The croutons on top took it out of the gluten free and ketogenic category, so I left them out. This keto chicken broccoli casserole version is still simply delicious, even without the croutons. I have been seeing that people are using pork rinds to add a crispy crusty layer to the top. I’m going to try that next!

Ingredients:

  • 2 cans cream of mushroom soup
  • 1 onion, diced
  • 1 cup of mayonaise
  • 1 large head of broccoli chopped
  • 1 pound of cooked chicken
  • 1 1/2 cups shredded cheddar cheese

Directions:

Dice the cooked chicken. Chop the broccoli. Place a layer of broccoli in a 9×13 inch pan. Layer the cooked, diced chicken on top. Add the diced onion. Put the mayonnaise and cream of mushroom soup in and stir it around. Mix well with the goal to coat the broccoli and chicken. Sprinkle shredded cheddar cheese on top. Bake at 350 for 30 minutes covered with tin foil. Remove the tin foil and let cook for another 10 minutes to allow the cheese to get crisp. Remove from oven and let cool for ten minutes before serving. Enjoy!

For convenience, I used Campbell’s cream of mushroom soup. This does have some extra carbohydrates in it. A serving of the canned soup is 9 carbohydrates, which is a lot, but you are mixing it in with lower carbohydrate vegetables, chicken and mayonnaise, which helps to lower the carb count per serving. Just make sure that you aren’t eating mega-size portions and you should be able to enjoy it in your ketogenic diet meal plan.

You can make substitutions for the Campbell’s cream of mushroom soup. There are recipes that use sour cream or heavy cream. This is my mom’s recipe. I may tweak it a little more to make it even more low carbohydrate, but for now, I love it! Here’s a picture of the final keto chicken broccoli casserole.

  1. Hi, thanks for sharing this recipe. You know I have never eaten Casserole before. But this looks so tasty.
    It looks really healthy as well which is great because I am trying to lose weight. I haven’t heard much about ketogenic diet but, will you be doing more recipes? I like food that is full of flavour and this recipe looks like it would taste great.
    How long can I keep it in the freezer for?

    1. Hi Freddy! I will be doing more recipes. I don’t know how long it keeps in the freezer. My family eats it up quickly! We usually have a meal with it and then leftovers the next day. 

      The ketogenic diet is a high fat, low carbohydrate diet that is used for weight loss, treating epilepsy and preventing Alzheimer’s. It eliminates foods that are problematic for people, such as sugars and processed foods, so for many people it reduces inflammation.

    However, I’m worried about the carbohydrate content in this recipe. Do you happen to know the nutrition facts and information for this recipe? Since I’m on a low-carb diet (limit 100 grams per day), I’m concerned that this is very rich in carbs and would like to know about ingredients that I can use in place of those that have a high carb content.

    1. All of the ingredients that are used are less than 10 carbohydrates each per serving. A serving would easily fit into your low-carb diet. Mayonaise is high in fat, but has no carbohydrates. The campbell’s cream of mushroom soup has 9 carbohydrates per half cup serving. You could swap this out and use something else, but you’d have to add some seasonings. One serving of this would not be more than half a cup of the cream of mushroom soup. When you average in the lower carbohydrate ingredients the average carbohydrate count per serving is decreased. Half a cup of broccoli is 3 grams of carbohydrates. This would fit easily into a 100 carb count meal plan. It squeezes into a ketogenic 20 carb count meal plan if you plan accordingly.
